Any landscaping ideas for ground coverings that would thrive on a steep hill with sunlight, look modern and live through a metro NY winter?

Sorry this idea will provide no direction. As I can't remember where I saw this...

There are these landscape bags filled with a soil medium and seeds. Add water and sun and viola you get this fabulous living pillow thing. Think Cha* Cha* Cha* Chia Pet only BIGGER than tabletop size!

From a distance this bag combined with others makes the steep hill come alive with texture. Sort of a modern bumpy fuzzy carpet.

I think I found it somewhere when searching for land erosion preventative ideas. We planned on using them where an expensive brick/rock would normally be used to flank a driveway bridge. I will search through my favorites and see where I hid the link. Surely they offer climates specific choices.
