We are pretty much obsessed with Kabocha this fall. For Thanksgiving, I made Kabocha pies instead of regular pumpkin pie, based off the recipe here, but leaving the skin on (and, honestly, just combining everything into a food processor at the same time instead of doing things one at a time blah blah).

With the leftover pie filling, I made little custards in ramekins…they might be gone before Thanksgiving dinner.
